This is a really easy-to-make treat when you want something sweet, but would like to make it keto friendly. I usually eat a chocolate fat bomb mousse or popsicle if I need to add a little more fat to my daily macros and/or want a sweet treat. If I am in the mood for mousse, I refrigerate the chocolate fat bombs and when I want a “popsicle,” I freeze them!
This recipe IS vegetarian friendly, but IS NOT vegan friendly!
8 oz. cream cheese, softened
1 stick butter, softened
granulated or liquid sweetener (I use Pyure organic stevia)
Before starting, make sure the cream cheese and butter are completely softened. This will save you from a lot of frustration and lumpy mousse/popsicle with chunks of cream cheese and/or butter.
- Add the cream cheese and butter into a mixing bowl. Mix with a hand mixer or stand mixer on medium until blended.
- Mix on high until smooth and creamy. If the cream cheese and/or butter are not softened, you will end up with chunks of cream cheese and/or butter in the mousse or popsicle.
- Gradually add in cocoa powder and blend on low until you have reached a desired amount of chocolate. Gradually add in sweetener and blend on low until you have reached a desired amount of sweetness. Once you have achieved the desired level of chocolate and sweetness, blend on high for 2 minutes.
- For mousse, spoon the chocolate fat bomb mixture into small dishes and refrigerate for at least one hour. For popsicles, spoon or pipe the chocolate fat bomb mixture into popsicle molds and freeze. Make sure you don’t have any air bubbles or you will have air pockets in your popsicles. * For smaller frozen treats, use a silicone mold or silicone ice tray.
